Carrot Cake:-
Well cakes have seamlessly integrated themselves into our life and have become one among us, also that is one thing that comes to mind whenever we think of any celebration.
I had never tried a vegetable cake and this was my first attempt at it and the recipe is a fool proof one the final product turned out to be delectably good and pleasing.
The idea of eliminating or tying to use whole wheat flour is done keeping in mind the harmful effects of refined flour and swapping it with whole flour which is rich in fibre and not refined is a wise choice which can be made. since cakes are adored by young and old alike having and incorporating healthy alternatives is worth a try and can foster healthier,cleaner and guiltfree treats to satisfy taste and soul alike.
Also this is made in pressure cooker , just to prove that no fancy / no oven individuals can also attempt this cake and enjoy the deliciousness it delivers.
So a quick instruction as to how to preheat your cooker,
Place the cooker on medium flame with a stand placed inside and close its lid without gasket and without whistle and allow to preheat for 15 mins.I used to add salt below , but without salt also it works as a oven. preheating allows the cooker to heat well and hence baking will be efficient.
So while that is happening you can mix all the ingredients into wet and dry and then make the cake batter and bake it.. tantadan.. you are almost done..
But before that lets collect all the ingredients, butter our tin and dust it.
so the ingredients required are,
almonds, any assorted dry fruits, raisins, bluberry/raspberry - 2 tbsp

- 1.5 cups whole wheat flour /1 cup all purpose flour+ 0.5 cup whole wheat flour.
- 1 cup sugar/ brown sugar
- 1 cup grated carrot
- 1 cup milk at room temperature
- 1/2 cup butter/oil
- 1tsp baking powder
- 1 tsp baking soda
- 1 tbsp cinnamon powder
- pinch of salt
- 1 tbsp Vinegar
- 1tsp vanilla extract.

Method:-
- Grate carrot into thin strands.
- Add wheat flour , Baking powder and baking soda, salt, cinnamon powder and sieve it twice so that it is mixed well.
- In another deep bowl take all the wet ingredients(oil,vinegar,vanilla extract) along with sugar and mix well/ beat it till it is mixed uniformly.
- Now add grated carrot into it.
- Add in the dry ingredients into wet batch wise and fold in rotating in a single direction.if too thick you can add milk to get a falling consistancy.
- Once the right consistancy is obtained , place the batter into greased and dusted mould/aluminium vessel.
- Tap it.and sprinkle nuts/ fruits- press gently.
- Now slowly place the mould with batter into preheated oven./ Cooker
- Bake it for 20 mins / until the inserted knife comes out clean.
- Put the flame off and after 2 min
- Remove from cooker and place it on a cooling rack .
- Allow to cool completely. Do not rush the process of demoulding until completely cooled.
- Once cooled. Demould - Place a plate on the mould and reverse it . tap the back of mould gently so that the cake is demoulded easily.
- Now carrot cake is ready. this is good to be eaten as a snack too, for school,office or a kitty party too.
- If you wish you can coat it with cream frosting or butter cream frosting too.
So do try this yummy tasty cake,.
Note:-
- Do not leave a time gap between pouring the batter and baking.
- Tap it after batter is placed in the mould.
