Panner fried rice is a quick, tasty and satiating dish with goodness of rice (Carb), paneer (Protein), oil(Fat), and vegetables - which are rich in fibre and also packed with nutrients and antioxidants. so It could be fair enough to say that it is a complete meal. So it can be made very quickly with prior planning or with left over rice  too.

This is ideal for any special  occasion and can be made in bulk too.Ideal for kids,teen and office lunch box as it has an ingredient which most of them love that is paneer and the taste can be varied as per individual's choice by the addition or not inclusion of specific sauces.

I made this on the account of celebration of our anniversary, where the usual eatout gets really boring after a tired office day and yet to keep the celeb mode on with taste which suits us.. was definately a great idea.

Ingredients:
Paneer- 200 gms
Rice - steamed/cooked- 1 Bowl
Capsicum- 1 big
Onion- 1 medium
carrot- 1
Cabbage - 1/4
Spring onion
Vinegar- 1tbsp
Tomato Ketchup- 2 tbsp
Soya Sauce- 1tsp
Green chilli sauce- 1tbsp
Green chilli- 1 Slit
Ginger garlic paste/ freshly crushed- 1 tbsp
salt- to taste
Pepper powder- as per taste.
Oil- 3 tbsp.

Method:
1. keep the rice cooked and ready.Dice panner into cubes or wedges. keep all the vegetables chopped in jullians ready. you can add or delete any vegetable,  you could also include brocolli, corn, for kids, teenagers.

2. Now in a wide fry pan add oil- 2 tbsp, add ginger garlic paste and slipt chilli. allow to fry and then add paneer and saute till golden.Take it out into a bowl and keep aside we shall add it later.

3. In the same pan add onion, capsicum, carrot, cabbage one by one and sirfry them. add in all the mixed sauce. stirfry again. now add cooked rice, paneer and salt and pepper, along with spring onion.

4. Toss and mix well. garnish with spring onion . serve hot.

To this i prepare a sauce and add in  finely chopped garlic, chilliflakes to Tomato ketchup to spice it up and then serve it along with the hot bowl of paneer fried rice.
