Mango Fruit Kulfi:-
Mango is the king of fruits and the peppy colour and the sweet delectable taste is something we all cant resist.In these times while most fruits are available all round the year this has still remained a seasonal so to say fruit so all of us wait for those summer to quench mango cravings.
this fruit is also very versatile and is morphed into many more delicacies in various forms and i bet whenever Katrina is on the tv eating/ slurping a mango off a bottle..(my young son was in awe when he saw that Ad), those tastebuds get activated and makes your mouth water for the same.
The various varieties of kulfi, icecream, milkshake ,juice, smoothie,purie,panacotta,custard,jelly and the list goes on and on, make us try everything under the summer !!
Now one particular varient of kulfi has caught my attention, where we can also eat the fruit as i love wholesome food in any form and know that it is best had that way than too many processing involved.
So this varient has a uniqueness to it where the kulfi batter is poured into a fruit and then frozen so when you are eating we are eating the kulfi with real fruit.. How cool is that..!! worth the wait for the summers i would say...and it can be frozen for few more days after summer too.
So here is the fool proof recipe for the same:
INGREDIENTS:-
Fresh cream- 3 tbsp
Full fat Milk-1/2 cup
sugar- 3tbsp
Dry fruit powder- 2 tbsp
Cardamom/Elaichi powder- 1 tsp
Vanilla/Mango essence- 1 drop(Optional)
Firm mango/es- 1
A narrow mouthed glass/cup.
METHOD:-
- In a pan on low flame take fresh cream and milk, allow to boil and then add sugar, cardamom and dry fruit powder into it boil until thick.
- Once it is thick put the flame off and allow to cool to room temperature.
- Now add essence - 1 drop
- Mix.
- Take a firm Mango cut the head and make a cut just enough to scoop and pull out the seed, so that the place for kulfi mix is made.
- now place the mango inside a narrow cup vertically, with empty middle portion.
- Add in cooled kulfi mix and place it in freezer for good 10 hrs or overnight with freezer setting to chill.
- Once the kulfi mix and the fruit has been frozen completely it is ready.
- you can also make sugar shards and use it for presentation.
You can peel the skin off mango using a peeler and cut the kulfi with mango fruit and garnish with dry fruits, nuts, fruit sauce etc.
