PAV BHAJI- popular street food

Pav bhaji is a street food loved by most. It is healthy as the bhaji is made with loads of veggies and hence is greatly stomach filling too.it can be eaten as a snack and almost anytime you feel like having them, i also make them for breakfast as it can be filling and the pav can easily be replaced with healthier version of breads or flavoured breads , where the option is completely on you, even the choice of vegetables can vary and you can add in as many as you wish and make all the vegetable haters binge on it.

 As it is spicy and masaledar with a bland- mildsweet bread coated with goodness of butter/ghee deliciously served with a dollop of the same on the bhaji as well. to top the flavour add chopped onion and lemon.. it is just heavenly i must say..as it is served piping hot it is apt for rainy and chilly weathers also...

I like to add as many vegetables as possible with tomatoes in larger quantity and the vegetables are completely mashed and the pav is dunked into the gravy bhaji and had with raw chopped onion and dash of lime squeeze and i can say you will totally relate to the taste as i am sure your taste buds are playing now and took you to your favorate pav bhaji moment.

Also as it is a one pot preparation the time for preparation is also considerably small and if you plan in advance and keep all the veggies chopped and ready for the preparation it is much easier as it can be prepared even if you are in a jiffy and heat pav in microwave as well to make it much easier.

Ingredients:
Vegetables:
Tomao-4-5
Potato- 2-3 big
Capsicum- 1 medium
Onion- 1 big
Carrot- 1-2
Cauliflower- 10 florets medium
green peas- 1-fistfull or as u wish
fresh coriander
green chilli
butter/ghee- 5-7 tbsp
Turmeric-1tbsp
Jeera-1tbsp
ginger/garlic- optional
chilli powder- 2-3 tbsp
Pav bhaji masala- 2-3 tbsp
kitchen king/garam masala/dhnia powder- 1tsp optional.
Fennel powder- a pinch
Pepper powder-sprinkle some ..
salt - to taste
Sugar- a pinch to cut sourness

Yes thats long enough..

Method:
1. Cut all the vegetables in big cubes. 
2. take pav /bread/garlic bread and cut them and make center cuts keep ready.
3. in a pan/cooker add butter/ ghee. add in jeera and turmeric powder.
4. add chopped onion and saute till golden then add capsicum and fry and then add the rest of the vegetables in no particular order and add water to immerse them.
5. close the lid and allow 3 whistles on cooker or till all the veggies are cooked.
6.Once the vegetables are cooked add the given dry masalas or what ever masala you have , add salt, sugar. if nothing else add some tomato ketchup and mash and mix them.
7. allow to simmer. Add chopped fresh coriander. mix and serve hot.
8. Meanwhile heat the butter smeared pav on tava and  serve with bhaji, chopped onion and lime and garnish bhaji with coriander.
