Pani puri is a chat which is liked and loved by all. It is made and served with different names across india and liked by all age group.I also love this chat so very much that it has so many memories attached to it and we have stuck to some pani puri bhayyas and go to them very often to enjoy the same taste everytime and usually never stopping with only one plate.
In collage we used to have it closer to our college where we would get chatty and make college fun and gossip about some famous ones , at times some affairs would be caught up as the pair would be spot right there , exchange glances or sharing their heart out.what ever.
Back home me and anna would never wait for any occassion to eat them.. we would be just sitting and suddenly one would think of it and the other would agree almost instantly everytime to one particular bhaiyya near Ramaiah bus stop. some times even mom would accompany us. and after that he had to work in another city and me and mom would get out walking and gulp these tasty chat and enjoy them.
Even though that bhaiyya cannot be spotted there anymore we still do eat panipuri from a new vendor which is as tasty.
In Malleshwaram right in front of MLA college there is a guy who happened to be hubby's favourite and now whenever we go to malleshwaram we never miss a chance to have the chatpata version of the panipuri , which we like to be very spicy and tasty...
we generally stick to our mantra , spicier the tastier..
We also make them at home when we desire to eat it spicier and clean where we know how clean the water and hands are which goes into the making of them.
So i know while you are reading through this your mouth is watering and you are also wishing to eat them now . this very moment to savour the taste and enjoy the taste.
I know there are many varieties and this one is by far the easiest and tastiest one. the different types i will attempt to make them some other time and definitely share the recipe with you guys.
Also most often we buy the puris from outside which can be found easily with the chips shop or any shop selling savouries.

Ingredients:
Puri- you can make them or buy readymade ones
For green pani:
Pudina - 1 cup
coriander leaves- 3/4 cup
Tamarind- 1 big lime sized.
Green chilli- 8-10
black salt
chat masala
jaljeera
Panipuri masala optional
salt
sugar -1tsp
onion- 1 medium
ginger-1/2 inch
black chenna soaked
Potatoes-2-3 medium sized

Method:
- Cook potatoes and channa in a cooker and keep it ready, by peeling the potatoes.
- In a mixer jar take cleaned and washed pudina and coriander leaves, chilli, tamarind ginger, black salt, cumin seeds, salt and little water. you can prepare and keep this chutney and dilute it whenever you want to make pani for puris . This can be prepared as a part of meal planning or when mint leaves are just brought and fresh.
- now dilute this paste retaining a little for the filling with water and start adding salt, black salt, jaljeera, chat masala, soaked tamarind water. mix well and pani is ready.. you could use bondi to garnish along with coriander chopped.
- In a mixing bowl take peeled potato, add chilli powder, masala powder turmeric, the ground paste/green chutney black salt, salt, boiled black channa and mix well.
- Just befor serving add onion and just a few drops of pani to the required quantity of filling.
- Keep puris ready by making holes in the center.
- fill it with potato mixture and then add pani right before serving.
Now our favourite chat is ready to enjoy..
